Who says trip to Japan said tasting sushi and sashimi fish and finally fish again!
I think we’ll discover during this trek a sushi very different from what we can eat in restaurants, do the little home! So much to savor on discover that in Japan, as is documented prior to the issue!
Means sushi: vinegared rice with all kinds of things, not that raw fish … this is the Western view of the sushi! In fact rice may be accompanied by many things: vegetables, eggs etc! It is the presence of rice dénomine the bite … there are indeed vegetarian sushi! Be aware that raw fish is called sashimi, and he is not prepared as sushi.
We do not know exactly when appeared the very first sushi. The starting point seems to be the beginning of rice cultivation in Japan that began in the fifth century. But the sushi had to appear in the 7th century, in effect at the time the fish were preserved in the cooked rice … what can be considered the « ancestor » of sushi! The raw fish was pressed between salt and rice. The fermented product and after several months, was ready for consumption. This is the 18th century, a Japanese chef has designed the sushi as we eat today.
So it must be understood before the rice was only a means to keep the pieces of fish: it alternated layers of carp and rice in jars sealed with a lid, then let it ferment until a year. Then only the fish was eaten, the rice was thrown! It is true that at that period the Japanese ate only rice. But later the Japanese have put a rice snack which served as curator and to flavor everything they soaked in vinegar. They appreciated it and put the sushi was born! So it is that the sushi in Japan really began to take shape, people took a liking to the combination fish / rice vinegar, and a side dish that was originally, it has gradually become a meal in itself.
However it was not until 1800 that there appeared different kinds of sushi:
Nigiri sushi: This is the most common … rice (sushi preparation) is shaped into rectangles or rolls, and then topped with fish or shellfish
Maki sushi: This is based compound leaves of seaweed, they are stuffed with rice, once the roll is completed, we put on top a variety of foods such as fish, vegetables or omelettes! .
Oshi sushi: sushi is that it is closest to the original one, because rice is pressed with the fish and cut into small bites.
Maze sushi: This is clogged varied enormously … literally « Maze sushi » means so mixed sushi, the bite is composed of rice associated with all sorts of things.
